This de Buyer frying pan is an ideal pan for preparing the perfect dishes. The pan is made of sheet steel, which heats up quickly and tolerates high temperatures. De Buyer Pans contain a high carbon content. This allows the pans to last a lifetime, provided you take good care of them. Like all de Buyer pans, the pan must first be burned in. Read below for the best way to do this. Before using a de Buyer steel pan you must first burn it to create a non-stick layer. To sear the pan you need an oil, however, olive oil does not work well, it cannot handle high temperatures. Put the pan on the stove and heat it on low heat. Pour a generous layer of oil into the pan and let it get well hot. When the oil begins to smoke, turn off the heat and let the pan cool. Then wipe the excess oil from the pan with kitchen paper. Now your de Buyer pan is ready to use!
